Things I avoid

If you are reading this because you want to find ideas to cater for a coeliac friend or relative, you must check directly with them what they do and do not eat. There may be medical reasons why all coeliacs are not on exactly the same diet.

So the following is the background to my recipes.

Whilst shopping in the UK I avoid anything labelled with wheat, rye or barley as an ingredient. I also avoid oats as many coeliacs do.
I avoid anything which has a warning "may contain " referring to wheat, rye ,barley or oats.
I am aware that these warnings are voluntary in the UK at present, so I seek out certified gluten free grains and flours noodles and pastas.
I avoid all of the many different forms of wheat (eg spelt, semolina, durum, wheat couscous, farro, farola, bulgur, triticale, other "ancient wheat grains"  )

I don't use codex wheat starch in my recipes, but other coeliacs may use it.

If I am abroad I have to get local advice on how things are labelled, and what the standards are in that country.
